Ingredients:
- 1/2 pound leftover spaghetti noodles
- 4 eggs
- 1 tablespoon olive oil
- 5 oz mozzarella cheese, grated or sliced
- grated parmesan cheese
Preparation:
In a large mixing bowl combine pasta and slightly beaten eggs. In a large skillet heat the oil, making sure to cover the bottom. Place half of the pasta in the skillet covering the bottom of the pan. Spinkle with grated parmesan, add a layer of sliced or grated mozzarella cheese. Then top with remaining spaghetti. Cook until bottom layer has browned. Now this part is tricky, make sure you are wearing an oven mit. Put a flat plate on top of the pan and flip the spaghetti omelet unto the plate, then slip it back into the pan on the uncooked side. Heat until the second side is brown. Serves 4.
